Daterra was the first farm in the world to package its raw coffees in sealed packages, preserving its coffee’s subtle nuances over the long oceanic journey to our shores. Daterra is always innovating and keeping growing concerns, such as climate change, in mind. From planting 150,000 native trees throughout the farm, to composting 14,000 tons of organic matter, to working on establishing corridors to allow the natural passage of wildlife easily throughout the vast farmland, their attention is fixed on sustainability in the face of climate change. Unlike the washed production method where coffee cherries are pulped, removing the outer fruit from the seed within, natural-processing allows the cherry to remain fully intact from its harvest until it is completely dried. A difficult process, much care and dedication goes into monitoring the seeds as they dry over the course of 20 days on three-tiered, raised drying beds. The coffee is placed in “reposo,” or rests for a minimum of 45-60 days to enhance flavor and shelf life, while multiple cuppings are performed to ensure quality. Finca Deborah focuses on sustainability at every point. They’re located so high up, deep in the Volcan mountains, traditional electricity is not available. Solar energy is used to power their farm which also helps to sustain the natural landscape and wildlife. In addition, the environment is not exposed to gas powered machines, harsh chemical pesticides or herbicides. Only natural, organic fertilizers are used. As one of the highest coffee farms in Panama, they are shrouded in rainforest cloud coverage much of the year. A benefit to this: diseases and fungus are kept to a minimum due to the temperature. George Howell Coffee · Montecarlos, El Salvador Montecarlos is a spectacular farm, covering the entire circumference of a dormant volcano, nestled in a chain of volcanic cones. On one side is the Pacific ocean and on the other the central plateau bringing warm winds up the northern slopes. This is a pure coffee with a light orange accent. Montecarlos Estate is owned and run by Carlos Batres and his wife, Julie. The couple were both educated in the US and have lived in metropolitan areas like D.C. and New York, as well as London, where Batres represented El Salvador at the International Coffee Organization before moving back to El Salvador. The farm has been handed down to family members for five generations, and in the mid-1980s, Batres inherited a slice of the land and has continued to expand it over the years, acquiring more land from neighbors (mostly relatives). He has now accrued at least 40 years working within the coffee industry. Montecarlos became the first estate in the world to grow and develop the Pacamara variety of coffee. Batres purchased most of the material El Salvador’s National Coffee Laboratory had been working on to cross the Pacas and Maragogype varieties. Between the years of 1987-1990 it was planted and developed at Montecarlos Estate, with the first commercial crop harvested between the years 1992 and 1993. Other varieties that each make up roughly 25% of the land are Catuaí, Caturra, and Bourbon (which we purchase annually). Pacamara grew popular after being acquired by Starbucks in 2004 and labeled as Montecarlos “Black Apron Exclusive,” and in the same year, was highlighted at the El Salvador Cup of Excellence for its quality. Batres is rightfully proud of being a major player in pioneering Pacamara coffee, and it continues to be a prominent part of the farm’s offerings. He continues to share it with other coffee farmers in El Salvador. El Salvador has a clear-cut dry season followed by a rainy one (May through October), ideal for evenly ripening coffee, which at the higher elevations occurs in February. Coffee is only harvested each season when perfectly ripe, which means that it may take several passes before the cherries are plucked to ensure the best flavor in the resulting cup. Once harvested, the cherries are milled and washed three times from the natural mineral water springing from the farm. The Montecarlos Mill has been in use for five generations, featuring the original architecture that has been in the family since the 1870s. Coffee is 100% sun-dried on clay patios which allow the beans to dry in fifteen days—keeping temperatures cool in the daytime and retaining warmth at night. The channel system of the Mill is also unique in that it uses gravity to carry the beans upon being washed to any of its 60 drying patios. Beyond coffee, The Montecarlos Estate does much to help its society. The farm employs 250 full-time employees and an additional 250 part-time, paying above minimum wage. The farm also supports a school, church, and the use of roads that make transportation easier between towns. The focus of Montecarlos is not single-minded in producing coffee, but also pays close attention to the community at large. We take pride in roasting our Montecarlos coffee. They produce some of the highest quality and easy-drinking regional coffees. Their farms average 7.5 acres in size. Ripe coffee cherries are brought to a local wet mill, El Retiro, to be processed. The coffee cherries are stripped of their outer fruit, then go on to be fully washed and dried on raised beds. Once at the dry mill, Beneficio Seco Las Cruces, a quality inspection is performed and beans are sorted, eliminating undesirable sizes. They go on to be separated by density (twice), before moving on to be color sorted, bagged, and cupped for quality before their voyage to the US. Driven by a desire to “make the coffee dreams come true,” he and his wife, Claudia, founded Finca La Hermosa in 2010. Situated on the slopes of the Acatenango volcano, the coffee farm benefits from fertile volcanic soils that nurture a diverse range of coffee varieties, including an entire “Gesha forest.” This coffee combines two distinct processing techniques - honey and natural sundried. The honey process incorporates anaerobic fermentation while leaving the sticky mucilage on the coffee seed for 2 days before being dried. Through the natural process, coffee cherries are dried with their fruit intact for 30 days on raised beds.
